DETERMINATION OF WATER-SOLUBLE PRODUCTS IN MARMALADE EXTRACT BY YUSSX METHOD

Abstract
In this study, water-soluble vitamins (B1, B2, B6, B9, B12, and C) in a marmalade product extract were identified and quantitatively assessed using the High-Performance Liquid Chromatography (HPLC) method. According to the analysis results, 100 g of marmalade contains 1.513 mg of vitamin B1, 5.313 mg of B2, 2.910 mg of B6, 3.390 mg of B9, 10.133 mg of B12, and 13.603 mg of vitamin C. These amounts cover a significant portion of the recommended daily intake for certain vitamins, confirming the potential of marmalade as a functional food product. The findings demonstrate the high accuracy, speed, and sensitivity of the HPLC method in determining the vitamin composition of food products.
